These healthy snack bars are not only super easy to make, they are also (and most importantly I’d say!) super delicious. They’re a concentrate of some of the best Fall flavorsΒ  – cranberries and pumpkin spice – so perfect for this time of the year!

And of course, they’re only made with clean nutritious ingredients. They’re sweetened with maple syrup (making them refined sugar free!) meaning you can enjoy them guilt-free whenever you need a little pick me up! Oh and they’re also vegan and gluten free!

No Bake Cranberry Pumpkin Spice Snack Bars {Paleo, Vegan and Gluten Free}

Ingredients

  • 1 1/2 cup almonds chopped
  • 1/2 cup almond flour
  • 1/2 cup pumpkin seeds
  • 1/3 cup flax meal
  • 3/4 cup unsweetened desiccated coconut
  • 1/3 cup dried cranberries
  • 1/2 cup almond butter or your favorite nut or seed butter
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla
  • 3 tablespoons maple syrup
  • 1/2 teaspoon sea salt
  • 1 1/4 teaspoons pumpkin spice

Instructions

  1. In a large mixing bowl, mix all ingredients together until well combined. Add to a 9x9 baking dish and freeze for 1 hour or until set. Cut into 12 bars and store in the freezer in an air tight container.
