If I were you, I would organize a brunch with your girlfriends just so you can make these beautiful apple pancakes loaded with even more apples – everyone will love you for it and they’ll want to be around you for ever. I’m not saying you should bribe your friends with food hey (just a little) but they do feel loved when good food is on the table!

Anyways, even if it’s just you, make these pancakes because they’re the bomb. They’re topped with basically apple pie filling (=warm, soft, juicy apples cooked with cinnamon + maple syrup 😱 OMG so good) and there are apples inside too.

I’m not even going to mention that these pancakes are healthy because at this point, I think no one cares – the stomach is thinking. But it’s still lovely to know that not only you’re treating yourself but you’re doing it with wholesome, nutritious ingredients. The best of both worlds. Me likey very much. Serving Size: 2 pancakes + apple topping

Gluten Free Apple Cinnamon Pancakes {Dairy Free + Refined Sugar Free}

Ingredients

    Pancakes:
  • 1 cup unsweetened applesauce
  • 1 cup oats
  • 1 egg
  • 2 tablespoons coconut oil
  • 1 tablespoon baking powder
  • 1 tablespoon maple
  • 1 teaspoon vanilla
  • 1 1/2 teaspoon vinnamon
  • 1/2 teaspoon sea salt
  • 1 medium apple, grated
  • coconut oil, for frying
  • Topping:
  • 1 teaspoon coconut oil
  • 2 apples, small dice (about 2 heaping cups of diced apples)
  • 1/4 cup maple syrup
  • 2 tablespoons coconut sugar
  • 1/4 cup water
  • 2 teaspoons vanilla
  • 1 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 3/4 teaspoon sea salt
  • Maple syrup, to serve

Directions

  1. Preheat oven to 200F/90C degrees.
  2. In a blender, add all pancake ingredients and blend until smooth.
  3. To make pancakes: heat about a teaspoon of coconut oil at a time over medium heat and scoop out 1/4 cup of batter per pancake. Fry a couple minutes on each side, or until it begins to bubble in the center, flip carefully and fry until golden brown. Repeat until you have about 10 medium sized pancakes. Set in a 200F/90C degree oven to warm while you make the topping.
  4. In the meantime, make the topping: Sautee coconut oil and diced apples over medium high heat, stirring often. Once apples begin to soften, add maple, coconut sugar, water, vanilla, spices and salt. Continue stirring often over medium heat until apples are tender, but not mushy. Once the apples look syrupy and softened, remove from heat.
  5. Top pancakes with apple topping and drizzle with maple syrup to serve. Enjoy immediately.
