Ok friends, when you make these, please make sure you are not alone because they are dan.ge.rous! You will be tempted to eat two or ten. They combine everything that’s so exciting about Fall: warm, soft cooked apples with a good dose of cinnamon and some maple syrup. All of that, in crispy oats cookie cups. I think “OMG” is the best word to describe how I feel about them.

The best part is that they’re not even bad for you (as far as treats can go!). They are treats for sure, but only sweetened with unprocessed nutritious ingredients – hello coconut sugar and maple syrup! – and made with coconut oil that’s loaded with nutrients.

But honestly, my favorite part is the way it makes your kitchen smell. So delicious and comforting! It was a pretty dull and raining day when I made this recipe and they instantly lifted my mood. That’s what I love about Fall baking, it makes you feel all cosy! Enjoy 🙂

Apple Crisp Cookie Cups {Gluten-free + Dairy-free + Refined sugar-free}

Ingredients

    Cookie cups:
  • 1 3/4 cup gluten-free oats
  • 3/4 cup almond meal
  • 1/4 cup tapioca or arrowroot starch
  • 3/4 cup coconut sugar
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon baking soda
  • 1/2 cup coconut oil, liquefied (more to grease)
  • 1 large egg
  • 2 teaspoons vanilla
  • Filling:
  • 1 teaspoon coconut oil
  • 2 apples, small dice (about 2 heaping cups of diced apples)
  • 1/4 cup maple syrup
  • 1/4 cup water
  • 2 teaspoons vanilla
  • 1 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 3/4 teaspoon sea salt

Directions

  1. Preheat oven to 350F/ 175C degrees.
  2. In a large mixing bowl, whisk together oats, almond meal, starch, coconut sugar, sea salt and baking soda. Stir until well combined, then stir in coconut oil, egg and vanilla. Stir well to combine.
  3. Grease a standard muffin pan, then roll dough into 12 equal balls, and add to muffin pan. Chill for 15-20 minutes, then shape the dough into “cups”, using a shot glass to press dough’s center. Once all dough is shaped, bake them for 13-15 minutes or until golden brown. Halfway through baking, remove pan and use a shot glass to reinforce the “cups”. Let cool for 20 minutes.
  4. In the meantime, make the filling: Sautee coconut oil and diced apples over medium high heat, stirring often. Once apples begin to soften, add maple, water, vanilla, spices and salt. Continue stirring often over medium heat until apples are tender, but not mushy. Once the apples look syrupy and softened, remove from heat and divide evenly among cookie cups. Serve immediately!

Notes

These will soften a lot in the 2nd day because of the apples - they’re still great, but they are best eaten of the first day!
