I travel a lot and I’ve lived in several different countries, but seriously, I could never live in a country where sweet potatoes are not a thing. The main reason? SWEET POTATO FRIES. A life without homemade baked sweet pot fries would be rather sad. If this is still foreign to you, you need to get on it ASAP (okay, Mum?!).

They’re so simple to make yet soooo good! I make mine with a ton of smoked paprika (some add cinnamon too!) and they always come out crispy no matter which oven I use (I’ve known my fair share of ovens in the past five years!). The simple pleasures in life 🙂

When I feel particularly not lazy, I love to make loaded sweet potato fries. It’s the goodness of sweet potato fries, upgraded. If you’re a long time follower, you might remember these taco loaded ones (people love them!!).

Today, we’re going Greek style! Homemade tzatziki, tomato salad with feta… super fresh and extra delicious! I can already hear you say nom, nom, nom… Enjoy! 🙂

Greek Style Loaded Sweet Potato Fries with Tzatziki and Cherry Tomatoes

Ingredients

    Fries:
  • 1.5 lb. - 700 g sweet potato, cut into fries (about 1/2in thick)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon smoked paprika
  • 1-2 tablespoons olive oil
  • Tzatziki:
  • 1 cup greek yogurt
  • 3 tablespoons chopped parsley
  • 3 tablespoons chopped dill
  • 2 garlic cloves, grated
  • 1 lemon, zest and juice of 1/2 lemon
  • 1/2 teaspoon sea salt
  • Freshly ground pepper
  • 1 cucumber, grated and drained
  • Tomato salad:
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, small dice
  • 1 garlic clove, minced
  • 1 teaspoon olive oil
  • 1/2 lemon, juice
  • 2 oz. - 60 g feta, crumbled
  • 1/4 teaspoon sea salt
  • Freshly ground pepper
  • Handful of crushed pita or chickpea chips, to serve
  • Chopped parsley, to serve

Directions

  1. Preheat oven to 450F / 230 degrees. Line a baking sheet with foil. In a large bowl, combine sweet potatoes, paprika, olive oil and sea salt. Mix with your hands to coat the sweet potatoes. Add sweet potatoes to the baking sheet in an even layer without touching. Bake for 15-20 minutes, then flip, and bake another 5-10 minutes or until crispy and tender on the inside.
  2. For Tzatziki: In a large mixing bowl, mix together greek yogurt, herbs, garlic, lemon, sea salt and pepper. Grate a cucumber, then wrap in a paper towel to absorb some of the liquid. Then, mix into yogurt mixture. Set aside.
  3. For tomato salad: In a mixing bowl, add tomatoes, red onion, garlic, olive oil and lemon juice. Toss with your hands to coat. Then fold in feta, sea salt, and pepper (Note: you can also sprinkle the feta at the end when serving to keep a beautiful presentation). Set aside.
  4. Add sweet potato fries to a large serving tray. Layer with tzatziki, tomato salad, parsley and crushed pita chips to serve. Top with flaky sea salt and freshly ground pepper. Serve immediately.
