So girlfriends, quick questions for you. How do you like having dinner ready to devour in no time when you get home at night (and all you want to do is open a bag of chips + Netflix & chill but you don’t because you have #goals and eating chips isn’t part of the plan)?

And what if this dinner is both light on those hips (remember, #goals) AND frankly super yummy? ’cause we’re not doing sad steamed veggies here.

Well, guess what? I’ve got exactly what you need. This recipe. These turkey taco lettuce wraps. I know, you didn’t see that coming huh?

But hey, seriously! They’re super easy to make and you’ll only need one pan (less dishes to clean = always better). The fact that you eat in little lettuce cups makes them cute in addition to being obviously delicious. Everything taco-something has to be delicious, right?

And you can devour a ton of them (like 6-8 of them!) without overeating which, quite frankly, I find deeply satisfying. Being a glouton without gluttony-induced consequences > me likes that.

Turkey Taco Lettuce Wraps

Ingredients

  • 1 teaspoon olive oil
  • 1 lb. / 500 g ground turkey
  • 2 garlic cloves, minced
  • 2 jalapeños, de-seeded and minced
  • 1 medium red onion, chopped
  • 1/4 cup salsa (ideally choose a sugar free one)
  • 1 teaspoon tamari (gluten free soy sauce)
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon coriander
  • 1 teaspoon sea salt
  • 3 scallions, sliced thin
  • 3 tablespoons cilantro, chopped
  • 2 baby gem lettuce or small romaine hearts, ends removed
  • Hot sauce, optional

Directions

  1. In a large skillet, add olive oil and heat over medium high heat. Add turkey, using a spatula to break up the meat into small pieces. Cook for 5-7 minutes, stirring occasionally, until all meat is cooked through and browned. Then, add garlic, jalapeño, and onion. Cook together for 5 minutes or until onions begin to soften. Stir in salsa, tamari, rice vinegar, spices and salt. Lower heat to a simmer and let mixture cook together for another 5 minutes, stirring occasionally.
  2. Assemble lettuce cups: Add a few spoonfuls taco mixture to each romaine leaf. Top each with a small handful of scallions and a pinch of cilantro. Repeat until all leaves are used. Top with hot sauce & serve immediately!

  1. To be completely honest when I think mouth watering food I think food that is no good for you. Then I stumbled upon not only your blog but this recipe and here I am, drooling over this recipe (not to mention others of yours). I want these now!
