As a Frenchy, banana bread is something I came across pretty late in my life – when I was 22 maybe?! – because it’s not at all as common in France as it is in English speaking countries.

I’ve always enjoyed banana flavors so when I tried my first banana bread, it was of course love at first bite and the start of a very long and happy relationship 💘.

Judging by the number of recipes online and the fact that about every single café or bakery I come across sell it, I’m guessing I’m not the only one at all. It’s ok, I can share 😸

So if you love banana bread too, there’s a high chance you’ll love these energy bites. They taste just like your favorite treat, but in the form of cute, portable balls.

No need to turn the oven on for these babies, all you need is a food processor. They’re loaded with wholesome nutritious ingredients like banana (obvi), dates, coconut and walnuts. No grains, dairy or refined sugar.

Banana Bread Energy Bites

Total Time: 1 hour, 20 minutes

Yield: Makes about 16 bites

Serving Size: 1 bite

Banana Bread Energy Bites

Cal: 113 - Protein: 1.7g - Fat: 8.8g - Carbs: 8.9g - Fiber: 2g - Sugar: 5.6g

Ingredients

  • 1 large banana, broken into large pieces
  • 4 medjool dates, pitted
  • 1 cup/4.2oz toasted walnuts
  • 1/2 cup unsweetened desiccated coconut
  • 2 teaspoon coconut oil
  • 2 teaspoon cinnamon
  • 1/2 teaspoon maple syrup
  • Pinch of sea salt
  • More desiccated coconut, to roll (about 1/3 cup)

Directions

  1. In a food processor, add banana and dates. Pulse until it’s a smooth paste, then add walnuts, coconut, coconut oil, cinnamon, maple and sea salt. Pulse until well combined and mixture is thick (if the mixture is not thick enough to roll, place in the fridge for about 30 minutes).
  2. Add desiccated coconut to a small bowl. Using about a heaping tablespoon for each bite, roll between your hands and add to the bowl to coat well with coconut. Place on a parchment-lined baking sheet. Continue until you have about 16 banana bites. Chill in the freezer for 30 minutes (or 1 hour+ in the fridge) before serving. Once chilled, store in an air-tight container in the fridge or freezer.
