Did I ever tell you that my mom is an English teacher? When we were kids, my brother and I went to the same school as hers (we were in primary school and she was teaching middle-school) so we would all walk back home together at the end of the day. When we got home, she would usually make us a homemade snack but sometimes we were allowed a special treat and had strawberry-flavored milk. You know the stuff in carton? It was so delicious! Or so I thought haha. The fact that the strawberry taste was 100% fake was obviously the least of my concerns, but now I know better. Real strawberries taste even better!

And if you’re reading this and think that strawberry milk is just for kids and this recipe just for moms…nah nah. I’m in my twenties (not trying to hide my age here, but if you’re reading this a year after I wrote it, then this post will be outdated… Mmm alright. It’s 2016 and I’m 26), I don’t have kids and still LOVED it. Feels like such a treat when really, it’s mostly just strawberries and almond milk! The perfect healthy summer drink ? Enjoy!

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: Makes 2 medium glasses (or 1 large glass, as pictured)

Serving Size: 1 medium glass

Healthy Strawberry Milk

Cal: 105.5 - Protein: 1.8g - Fat: 1.8g - Carbs: 21g - Fiber: 3g - Sugar: 16g

Ingredients

  • 11 oz - 300 g fresh strawberries, hulled and halved (weighted after being hulled)
  • 1 tbsp honey (or pure maple syrup)
  • 1 tsp pure vanilla extract
  • 1 cup unsweetened almond milk (I love Almond Breeze refrigerated almond milk) - you can also use dairy milk or another non dairy milk

Directions

  1. Preheat oven to 360F - 180C.
  2. In a bowl, add strawberries, honey (or maple syrup) and vanilla extract. Toss to combine. Arrange strawberries + juice on a baking sheet. Bake for 10 minutes. Remove from the oven and set aside to cool.
  3. Transfer strawberries in your blender (I have this one and I love it!). Don't forget the juices! Add almond milk and blend until very smooth. Taste and adjust sweetness if necessary by adding a little bit of honey or maple syrup (It's sweet enough to my taste as is).
  4. Transfer into two glasses and refrigerate until completely chilled.

  1. In all my years I’ve never heard of strawberry milk! But it sounds delicious, like something I’ll have to try.

  2. This sounds very yummy, and I like the suggestion to use almond milk. The photo is also very nice! I was surprised to see it calls for baking the strawberries first, as it seems like a waste of electricity to heat the oven for ten minutes – especially in summer. I think I would try it in conjunction with baking something else, or else without heating the berries. Strawberries are in season where we live and this inspired me to get some the next time we go to market! Thanks, Marie!

      Roasting the strawberries really makes a difference; it brings out their flavor and makes them even more delicious! I tried without roasting them first and it was good, but a little something was missing 🙂 I understand your concern about electricity; roasting them when you’re baking something else sounds like a good solution!
