Humm, that’s a weird title. Almost paleo energy bites? What is that?!  Well, you see, these little bites tick all the paleo boxes – except one. They’re grain-free, gluten-free, dairy-free and sugar-free. So far, so good. But…I used peanut butter. And cavemen don’t eat peanut butter (sad face). If you follow a strict paleo diet, you can easily swap the PB for your favorite nut butter (homemade almond butter perhaps?). But if you’re just looking for a healthy snack then by all means, stick with peanut butter! I used bananas to make these bites and I’m sure you will agree that the marriage of banana and pb is just glorious. And it instantly reminds me of my most popular recipe ever: Chocolate Covered Frozen Banana and Peanut Butter Bites <= seriously good.

Me calling these ‘energy’ bites is a sneaky way to say that they are carb bombs. Good and nutritious carbs though as there’s not a single pinch of sugar in there and they’re made with wholesome healthy ingredients. But still. If you’re trying to lose weight, then you should stick to two bites – no more – and preferably just before a workout. That being said, not all of you are trying a shed a few pounds so by all means, go wild and finish that batch already!

Yield: Makes about 25 bites

Serving Size: 1 bite

Almost Paleo Energy Bites {grain-free, gluten-free, dairy-free, sugar-free}

Cal: 88 - Protein: 1.7g - Fat: 5.2g - Carbs: 10.3g - Fiber: 1.8g - Sugar: 7.9g
WW Old Points: 2 pts - Points+: 2 pts

Ingredients

  • 10 medjool dates, pitted
  • 1 banana (not ripe)
  • 1/2 cup coconut flour
  • 1/2 cup natural peanut butter (or your favorite nut butter)
  • 1 tsp pure vanilla extract
  • 3/4 cup fine desiccated coconut

Directions

  1. Place dates in the bowl of your food processor and process just until they turn into big chunks (not paste).
  2. Add banana and pulse just once or twice to combine. Add coconut flour and pulse just once or twice to combine. Add peanut butter and vanilla and pulse again. The key here is to avoid processing too much. You want to avoid the mixture to be runny. Finish combining with your hands if necessary.
  3. Form balls the size of one tablespoon. You should get around 25. Roll them into desiccated coconut. Store in the fridge and consume within 5 days.

Notes

Because one of the ingredients is banana, these bites should be eaten fairly quickly.

  3. Ohhhh man, these turned out delicious! I whipped up a batch this morning and they’re half gone!
    I made a few subs due to what I had on hand, but I am so glad I tried these out today. I’ll be putting them into my rotation for packed lunches starting this week. Can’t wait to experiment with more combos using this recipe as a base

    P.S. I subbed almond extract because I was out of vanilla and my kitchen smells like Christmas cookies! And these taste like cookie dough. SO GOOD. Thanks!!!
