Smoked Salmon and Arugula Salad

Two weeks ago, we were grocery shopping with Solal when I spotted this amazing special: 1 kilo (about 2.3 lb) of smoked salmon for only $19. Talk about an awesome bargain! As an unconditional smoked salmon lover, I couldn’t pass this great opportunity to gorge on the delicious stuff. The initial plan was to freeze some of it, because you know, 1 kilo is a lot when there’s only two of you. But for some reason, I could get myself to do it (probably because I secretly wanted to eat the whole thing) and we ended up having a “smoked salmon themed” week. We first made some lox & cream cheese bagels, because they’re my favorite way to eat smoked salmon. Pair it with a nice movie on a Friday night and that’s what paradise looks like to me. And then we practically added salmon to every meal we were having, including this salad. Which obviously led to an overdose. I probably won’t be able to eat smoked salmon again, for at least…a week 😉

Smoked Salmon and Arugula Salad

Total Time: 10 minutes

Yield: Serves 1 as a main

  • 2 cups arugula
  • 1/3 cup celery, chopped
  • 1/2 apple, peeled, cored and cubed
  • 1 tbsp chopped walnuts (or more to taste)
  • 2 oz smoked salmon, cut into stripes
  • 2 tbsp Skinny Green Grapes Dressing


  1. Arrange arugula in a plate.
  2. Top with celery, apple, walnuts and smoked salmon.
  3. Drizzle with dressing and enjoy 🙂

  1. Yet another recipe I’d like to try, but this one would definitely have to be when my husband is not around. He’s not a big fan of arugula or fish of any kind. Every now and then I get a chance to do something like this when he’s gone. 🙂 I have to say, though that he has been really good with all the experimenting I’ve been doing, and he’s even agreed to try a green smoothie! So I have to be nice to him with other things…

    1. Solal isn’t really into fish and seafood either… he loves smoked salmon though, so that’s a good thing 😉 That’s great if your husband agreed to try a green smoothie!
