All you want for Christmas is this topping. Close your eyes and think about it. Crunchy pecans, sweet cranberries, beloved cinnamon and…crispy bacon. Dreamy, right? If I lost you at bacon, please bear with me. Trust me when I say it pairs so well with the other ingredients. I’m not quite sure why I incorporated bacon in the first place but I just couldn’t help myself, I just knew it would work! Sure, you can leave it out if you insist, but I believe it’s what makes this dish so balanced and so good.
It’s this time of the year again when I have to convince my brain that it is indeed Christmas in a few days and that I should start making plans for the big day. I wasn’t born in Australia and for me, Christmas means cold weather, maybe even snow. Not sunny and warm days. You understand my confusion… I still need to take our Christmas tree out of the closet! I must confess though that I started listening to Christmas songs in late October. Couldn’t help it, they’re so merry and joyful!
