Did you know that you could use raw zucchini to make salads? Spiralized zucchini (also known as zucchini noodles!), paired with a simple dressing of olive oil and lemon juice, makes the perfect fresh summer salad. No need to cook anything!

From this yummy base, you can build on plenty of different salad combinations. A very popular one is Caprese, with mozzarella, basil and lots of basil or pesto. So, so good!

Today, I’m sharing another perfect combo made with cherry tomatoes, feta cheese, mint and pistachio. The fresh mint and the pistachios really makes the difference here! It’s fresh, it’s summery and it’s so light you can eat a huge bowl.

It’s one of the things I love most about eating veggie noodles: you get to eat a very big portion – sometimes double or triple what you should be eating if you were eating pasta. Sure, it’s not as filling as pasta so you need to eat more anyway to be full, but psychologically, it’s pretty satisfying 😄 Plus it’s really an easy way to eat an additional portion of veggies. Spiralized Zucchini Salad with Tomato, Feta, Mint & Pistachio

Ingredients

  • 4 cups zucchini spirals (from about 2 large zucchini) - I recommend this Spiralizer
  • 1 garlic clove, minced (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 pint (16 oz./ 450 g) cherry tomatoes, halved
  • 3 tablespoons chopped fresh mint
  • 1/2 teaspoon sea salt
  • freshly ground pepper, to taste
  • 1/3 cup toasted pistachios, roughly chopped
  • 4 oz. (100 g) feta, crumbled

Directions

  1. In a large mixing bowl, toss zucchini spirals with garlic, lemon juice, and olive oil. Then, add cherry tomatoes, mint, sea salt and freshly ground pepper. Toss mixture well to coat. Top with toasted pistachios and crumbled feta. Serve immediately!
