hey, you ready for your 4th of July celebrations? I’m not in the US so I don’t actually celebrate Independence Day but I love seeing all the blue, white and red desserts, decorations and outfits popping up everywhere on the Internet as the day approaches. They’re so festive and pretty! Plus, lots of “patriotic” desserts include some kind of berries to represent the three colors – and as a big berry fan, I can only jump on the occasion to share a berry recipe myself  😁

Unless you’re in the Southern Hemisphere (Hello Australia!) – which I am not at the moment – July means summer and the necessity to cool off with delicious frozen treats. Enter these very berry Popsicles with Greek yogurt! They’re healthy enough to be eaten for breakfast, as a snack or as a light dessert after a (maybe too big) meal. Only lightly sweetened, they let the fruits shine. And can you see how pretty they look? “Wow” and “yum” guaranteed!

Yield: Makes 12 popsicles

Serving Size: 1 popsicle

Mixed Berry and Yogurt Popsicles

Cal: 60 - Protein: 3.4g - Fat: 0.2g - Carbs: 11.7g - Fiber: 1.2g - Sugar: 9g

Ingredients

    Yogurt layer:
  • 1 1/2 cups greek or plain yogurt
  • 1/4 cup maple syrup or honey
  • 1 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • Blueberry layer:
  • 2 cups blueberries
  • 3 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • Raspberry layer:
  • 1 cup raspberries

Directions

  1. In a high-speed blender, add yogurt, sweetener, vanilla and a pinch of sea salt. Blend until smooth, then pour evenly into 12 popsicle molds (it will fill just the tip area of each) (I used THESE popsicle molds)
  2. In the same blender, add blueberries, lemon juice and maple syrup. Blend until smooth, then pour blueberry layer evenly between popsicle molds.
  3. Add raspberries to a small mixing bowl and mash well with a fork. Then add the raspberry layer evenly over the remaining popsicle molds to fill. Use a spoon or q-tip to dip in popsicles to swirl color around. Add popsicle sticks, leaving 2 inches or so for a handle. Freeze for at least 6 hours to set. Before serving, defrost for about 10-15 minutes, then serve immediately.
