Girlfriend, I know you’re a super hero, probably juggling with a million things every day and dealing with a to-do list the size of your arm (I know I am!🙋). Whether it’s working, studying, going to gym or doing all your different activities… you need energy to keep you going!

Snack balls are the perfect pick-me up when you need to keep pushing and it’s not time yet for lunch or dinner (sad face).

These balls are basically upgraded granola. They’re made with almond butter, banana and of course, granola – they’re so good! They taste like a treat BUT they’re still healthy enough to be consumed daily #winning.

Make a batch this week, store them in the fridge and grab one when you need a little boost!

Granola Bites {Vegan – Gluten free}

Total Time: 1 hour, 20 minutes

Yield: Makes 20 bites

Granola Bites {Vegan – Gluten free}

Cal: 107 - Protein: 2.9g - Fat: 5.3g - Carbs: 13.5g - Fiber: 2.2g - Sugar: 4.2g

Ingredients

  • 1/2 cup almond butter
  • 1 large banana
  • 1 teaspoon coconut oil
  • 1 teaspoon maple syrup (optional)
  • Pinch of salt
  • 2 cups / 7.5oz / 210 g (your favorite) granola - see notes
  • More granola, to coat (about 1 cup)

Directions

  1. In a food processor, add almond butter, banana, coconut oil, maple and sea salt. Process until smooth, then add granola and pulse until just combined (don't over mix). Chill dough for 30 minutes.
  2. Add a handful of granola to a small mixing bowl, crush it well with your hand to break up any big pieces. Once dough is chilled, use a heaping tablespoon for each bite, rolling between your hands to mold (using slightly wet hands makes it easier!). Add to mixing bowl to coat with granola. Repeat until you have about 20 bites. Chill for at least 30 minutes before serving. Once chilled, store in an air-tight container in the fridge or freezer.

Notes

Please note that the nutrition facts will vary greatly depending on the granola you're using. If you need to count your calories or macros, make sure to plug the brand you're using into your calories counter.
