I really debated whether or not I should post this recipe on the blog. This Galette des Rois didn’t turn out exactly as I wanted it. It should have been thicker and prettier. It should have looked like this. I asked my followers on Facebook and they encouraged me to share it anyway. I know this recipe works well because I made it several time. I guess the most important thing is how this Galette des Rois tastes after all, right? And I would say, it was pretty tasty!
The Galette des Rois is a traditional French dessert served on Three Kings’ Day, composed of puff pastry and filled with frangipane, a cream made from almonds, butter, eggs and sugar. Kids particularly love this Galette des Rois tradition because it’s sort of a game for them. A fève – which is basically a lucky charm – is hidden in each galette. The youngest kid of the family goes under the table (or close his eyes) and shares at random the slices among the guests. The person who finds the fève in his/her slice is crowned King or Queen. The King must then choose his Queen (or the Queen chooses her King!). Most of the time, parents make sure the fève ends up in the kid’s slice. My mum even used to hide several fèves in the galette so that both my brother and I had one
This Epiphany tradition is also popular amongst grown-ups but mostly because the Galette des Rois is delicious! Not to mention French people usually love to gather around the table and share a good meal with friends and family. A lunch lasting two to three hours or even a whole afternoon is not an unusual thing!
By the way, do you guys all know I’m French? We moved to Australia about a year and a half ago and we never looked back! In a couple of weeks, I’ll be flying to Paris for three weeks and it will be the first time I’m back in France. First thing I’ll do is eat some foie gras. And I’m not even kidding!
- 1 cup semi-skimmed milk
- 1/3 cup sugar
- 2 eggs
- 1/4 cup all purpose flour
- 4 egg yolks
- 1/3 cup sugar
- 5 oz almond meal
- 2 oz butter (1/4 cup), softened
- 1/3 cup sugar
- 3 apples, peeled and thinly sliced
- 2 sheets puff pastry (round shape is best!)
- 1 egg yolk
- Start with pastry cream. In a medium pan, bring milk to a boil. In a bowl, whisk together eggs and sugar, then add flour and boiling milk. Mix well. Transfer mixture back to the pan and cook on medium heat for about 3 minutes, whisking constantly. Line a baking dish with plastic wrap, pour pastry cream, wrap with plastic and let it cool in the fridge for one hour.
- Make almond cream. In a bowl, whisk together egg yolks and sugar. Add almond meal and butter. Mix well.Remove pastry cream from the fridge and soften with a whisk. Add almond cream and mix well.
- Make caramelized apples. In a skillet, melt sugar. When sugar is melted and turned into caramel, add apples and cook on low heat for about 5 minutes. Remove from skillet and set aside.
- Assemble galette. Preheat oven to 360F. Beat remaining egg yolk with a little water. Brush the edges of the first puff pastry sheet. Spread almond cream, leaving a 0.5 inch border. Add fève and top with caramelized apples. Cover with second puff pastry sheet, crimping or pressing the edges of the pastry to seal galette. Using a sharp knife, score a decorative pattern in the top layer of the pastry, without cutting through to the almond filling (I forgot to do that!). Brush with remaining egg yolk mixture.
- Bake for 40 minutes and serve warm.
