You might remember this dressing from the Arugula Salad with Shrimp and Grapes I posted a few months ago. It’s not exactly new but I thought it deserved a post on its own. This dressing is very smooth, light tasting and goes well with a lot of salad combinations. Even though grapes are the main ingredient, their taste is not empowering. It just gives a nice velvety texture without having to add too much oil.
Cal: 28 - Protein: 0.2g - Fat: 1g - Carbs: 4.5g - Fiber: 0.25g - Sugar: 3.8g

- 1 1/3 cups seedless green grapes
- 2 tbsp white wine vinegar
- 2 tsp olive oil
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Combine all the ingredients in a blender and blend until perfectly smooth.
