Tomato, Pesto and Mozzarella Skewers

Hi everybody, I hope you all had a wonderful week-end. Are you guys already on vacation? I was working (yeah I know…) so I didn’t had much time to cook this week-end. But still, I have a delicious recipe for you today, and I hope you’ll love it as much as I do.

Those cute mini-skewers are the perfect appetizer for any backyard party this summer. They look fancy but they’re quick and easy to prepare. I’m pretty sure your guests would be impressed.
They taste absolutely amazing. To make it short, it’s like having Italy on skewers. No kidding! If you can’t visit to this wonderful country this summer, make those at home and let your tastebuds travel for you.

Yield: Serves 4. Makes 8 mini skewers

Serving Size: 2 mini skewers

Ingredients

  • 1/4 cup homemade pesto
  • 8 mozzarella mini balls (or cubed mozzarella)
  • 16 cherry tomatoes
  • 16 wooden mini-skewers (or toothpicks)

Directions

  1. In a small bowl, combine pesto and mozzarella balls. Mix until balls are well covered with pesto.
  2. Thread one tomato onto a skewer. Add one pesto covered mozzarella ball. Finish with another tomato.
  3. Repeat with remaining ingredients.
